Red Kidney beans Empty Red Kidney beans

Post by Angela Fuller Sat Oct 08, 2016 11:13 am

For the first time ever I see Eurospin are selling them. Ok, so in cans with the usual sugary, salty stuff that can be rinsed off but maybe a must for the store cupboard ?   Also, has anyone enjoyed cooking with rape seed oil, just watched James Martin on tv....he seems to think it is an excellent alternative to butter / margarine....

Lidl sells them too. Most Bio shops sell them dry.

Yes, I knew Lidls did sell them but my nearest Lidls is 3/4 of an hr away, almost a 2 hr round trip, Eurospin only 15 mins away, never heard of Todis V, us mountain folk live very sheltered lives !

TODIS is 10 minutes or so past Q-bo in Magliano di Tenna.

If you're down that way.............it's a supermarket chain and I think there is only one/two in Le Marche, it's a tiny bit different.....not necessarily better !

The kidney beans in Eurospin are limited quantity, so may not be carried as a normal stocked line.

The best dish to prepare with red kidney beans is the Mexican Chili con Carne http://www.bbc.co.uk/food/recipes/chilliconcarne_67875
And if you have a Crockpot it is great for making this dish.
As for oils, I prefer extra virgin olive, canola or sunflower, all in limited quantities.
Pure butter should be used sparingly because of the high content, but do not go for the light version as it contains too many additives. I would not touch margarine.

Looks like a nice recipe Gala but I will have to leave out the fresh coriander, a rarity arounf here and I will substitute the beef mince with green or puy lentils as trying to cut down on meat and find the lentils work well for me....I too don't touch margarine even if Mary Berry uses it in her cake mixes, prefer a small quantity of butter.  Have you tried spiced up or herb infused rape seed oil ?  Thx again.

Angie, Canola oil is rapeseed oil http://www.naturalnews.com/034733_canola_oil_rapeseed_food_labels.html
It is just a marketing gimmick.
I do use, from time to time, some canola oil, but I prefer to use extra virgin olive oil for flavour, etc.
As for the chili recipe... a reduced amount of extra lean veal mince will not hurt anyone, will give you top class protein and it will taste much, much better...

That's interesting to know Gala...Will stick to my lentils tho' not happy with eating veal....and the lentils do make a good substitute for meat, good texture and with the sauce combined you would hardly know there was no meat involved !

Conad sell Fagioli Rossi which I use in chilli (though not sure if you get Conads where you are). I always use rapeseed oil for cooking in the UK as it has a higher flashpoint and I had heard that olive oil is not so good for you when heated to higher temperatures e.g. when frying.

I am afraid that those ideas about frying and olive oil have been masterminded by those countries which do not produce olive oil. Frying in olive oil has been a traditional way of cooking in Mediterranean countries for thousands of years and these populations live longer and remain healthier than their northern neighbours. Here you have quite a detailed analysis about frying in olive oil http://www.internationaloliveoil.org/estaticos/view/85-frying-with-olive-oil

Thx FBower, I will try a few when next visiting a Conad store.  Lots of info on the net re the 'olio di canola', it is supposed to be among the healthiest of plant derived oils, low in saturated fat and high in polyunsaturated fats !

I am not too convinced about the goodness of this artificially engineered Canadian oil. Have a look at this https://authoritynutrition.com/canola-oil-good-or-bad/
I only use very small amounts for cakes, as olive oil's taste is too strong for certain sweets.
