Pizza Oven Empty Pizza Oven

Hi

I am looking to have a traditional style wood fired pizza oven to be installed onto a base in our outdoor kitchen area. I had a chat with our local builders merchant and they said they could provide ovens by di fiore. When I looked at them, they seemed to take a really long time to get hot enough for cooking, and it takes around 10 minutes to cook a pizza. I wasn't sure if this suggests that they aren't a great product.

Has anyone got experience of buying/installing/using something similar to this? How long would you expect to get it hot enough, and how long to cook a pizza? Is it fairly straight forward to cook a good pizza?

Any recommendations for brands/installors/merchants in the Marche area?

The old style ovens warm up in 20/30mins and it takes 8 to cook.   You would be hard pushed to find a wood burning oven that is hot enogh in less than that I suspect.  A good pizzeria will light the oven 2 hours before opening.

Ah, thank you Modicasa. I am being quoted heat up times of around 3 hours! 30mins would be no issue at all. Any other experiences out there?

Thanks all for your previous replies. In the end I bought one made in the UK! It was easier. However, now I'm at the next hurdle.... the wood. In the UK I would be searching for kiln dried wood and natural firelighters. I know where the local wood yard is in Marche, but am not holding out much hope of him stocking either of those commodities. Anyone have any pointers here?

Don't know here you are in Marche, but think you may have a problem with kiln dried.
