Has anyone tried this in Sardinia.
I do like looking, cooking and trying different foods from around the world. This was another slant on Italian food that I have just found. Has anyone tried it when they have been in Sardinia?? The cheese is very lively!!!

Well, black pudding is really a blood sausage...
Not too keen on the cheese with maggots... in Sardinia, I prefer"culurgioni"

Re: Has anyone tried this in Sardinia.
All civilizations have been eating black pudding, or "blutwurst", or "sanguinaccio", or "biroldo", or "morcilla" or "boudin noir", etc., etc. in most places and countries around the world. It is very healthy and can be very nice Blood sausage
Strongly recommended
As for the maggots...

Nothing wrong with black pudding Steve, or the style it is served up. Has a lovely taste if spiced properly when made, unless you do not like the lumps of fat in itstevegwmonkseaton wrote:Yeh black pudding just as bad!!!

I agree with Geo, there are some delicious black puddings with the addition of rice, pine nuts, hazelnuts, hrtbs and spices. Braised or barbecued and aerved with mashed potatoes or sweetpotatoes, caramelized onions, roast peppers. Delicious!!!!

I'm sure you are right Geo...
I'm sure you are right Geo... For you and most of my family it's a lovely thing to eat! There is always one awkward one in the family, and I was it... They all eat it often, but I could not even stand the sight of it! The other was tripe... urrgh! Funny enough the last time we were out with friends they had tripe here in Italy which looked a lot more interesting than "mums"...Geotherm wrote:Nothing wrong with black pudding Steve, or the style it is served up. Re: Has anyone tried this in Sardinia.
I love Biroldo, which is a specialty around here. The best way to eat it is wrapped in Necci the Chestnut flour pancakes with ricotta.
Actaully I was amazed as I'm from Stoke where we have Staffordshire Oatcakes, and the best filling for them is BlackPudding and chees, it was like being at home when I first discovered the locals love this, it's curious how dishes translate over the World with very similar dishes available thousands of miles apart.

Re: Has anyone tried this in Sardinia.
Yes, Flip, we find similar recipes and methods that are shared throughout the world and its history. Let's take pies or pasties as an example. We find "calzoni", "empanadas", "pastelillos". "samosas", "dim sums", "piroshki"...and we could go on and on for a long time. Ingredients may vary slightly, methods of cooking may be different (baked, grilled, fried, steamed), but basically it's always a dough with a filling according to local ingredients. This is a small world...

Hopefully, next time I go to look at a project in Tuscany then I will try to find it. It is not known here in Marche!!

Grilled black pudding with Parmesan and bacon rissotto... delicious! And I have also made roasted capsicum stuffed with black pudding and bacon and Parmesan rissotto... heavenly! Actually, this is a very easy dish to make if you have a Crockpot.
